Spicy Tuna Bites

As a preview of my 12 week food budget challenge, I’ve made a super easy twist on the classic tuna sandwich. This is an open faced, spicy tuna sandwich that will make you fall in love with the dish all over again!

INGREDIENTS

  • 2 cans light flaked tuna
  • 2 sticks of celery, finely chopped
  • 2 roma tomatoes, diced
  • 2 green onions, chopped
  • 1 cup chopped cilantro
  • 3 tbsp japanese mayo
  • 1 tsp sriracha
  • 1 tbsp lemon juice
  • pinch of salt and pepper
  • butterleaf lettuce head
  • dijon mustard to spread

RECIPE

  • mix all your ingredients in one bowl
  • spread the mustard on your slice of bread
  • top with lettuce, and a heaping tablespoon of tuna mix
