Lemon & Poppy Seed Madeleines – Gordon Ramsay’s recipe with a twist!

Lazy Tuesday on my holiday, Jenny and I decided to have a second go at making these delicious French treats. The first time we went at it, I took them out a minute too early and they were a little underdone. We really enjoy this recipe by Gordon. It was quite an adventure we had just trying to find one of these trays! We did much better this time with a little experience!

These are super simple to make.

INGREDIENTS

  • 3 Medium Eggs
  • 80g Sugar
  • 80g Plain Flour
  • 75g Unsalted Butter
  • 1tb Poppy Seeds
  • Zest of 1/2 lemon

Pre-heat oven to 170C

RECIPE

Start with beating your eggs and sugar in a bowl with a whisk, continue to beat until the mix is light and smooth (the more you whip it, the more it will rise)
Sift in the flour and mix well
Add your lemon zest and poppy seeds
Melt the butter in a separate bowl, cool slightly, and add to the mixture
Once completely incorporated, brush the rest of the butter onto the pan, then sift some extra flour on top of the butter. Shake off excess (This keeps the madeleines from sticking to the pan and allow them to fall right out once done)
Pour mixture just slightly under the brim of each mold
Bake for 12 min

**Add a twist! Substitute the lemon zest and poppy seeds for cocoa powder and vanilla bean for a Chocolate Madeleines!
